Too many emails.
Too little time before the day has even begun.

All too often, my mornings end before I think they even begin. With emails coming in all night, classes to prepare and teach, dogs to walk, projects to get out the door, workouts to attempt, and more, I feel like when I finally look up to grab some breakfast…it’s SO LATE.
First, I have to tell you that I know and will defend vehemently that BREAKFAST IS THE MOST IMPORTANT MEAL OF THE DAY (as my husband knows quite well, that is a hill I’m 100% willing to die on). It really does start your day the right way. Think about it — you’re body just woke up from a (hopefully) restful night and it’s getting ready for the long day ahead. It NEEDS fuel to run throughout the day!
Unfortunately, while I’d love to make a delicious, fresh and healthy breakfast from scratch every day, most days are more like what I described above. So, in order to make sure I get the adequate nutrients and fuel I need for my busy days, I’ve taken to planning ahead with healthy recipes I can quickly grab!
One of my new favorites is Overnight Oats. While the concept is not new to me, I’ve pulled together what feels like the easiest and tastiest recipe for Overnight Oats ever… It’s simple. It’s delicious. It’s quick. And it lasts once you prep – I often make a few jars on Monday to have ready for the rest of the week! We almost always have a few jars in the refrigerator just in case – they’re great for a late afternoon snack as well!
Plus, it’s timeless. Meaning you can dress it up however you’re feeling during that season/time! This summer I ate it covered with fresh blueberries and honey! Now that it’s fall, I’m dressing it up with some chopped figs and maple syrup! You can truly make it your own!
- 1/2C rolled oats
- 1/2C almond milk
- 1t chia seeds
- 1t ground flax seeds
- 1/2 scoop Tone It Up collagen powder
- 1/8t McCormick natural cinnamon
- 1/8t McCormick natural ginger
- pinch salt
- Mix all items together.
- Add to an airtight container (I love Ball jars!) and put in the refrigerator overnight.
- Top with honey and berries for a delicious morning treat!

Happy NOVEMBER everyone! I can’t believe it – between the good, bad and crazy, this year has truly flown by at record speeds. It’s scary to say, but 2019 is just around the corner! Every week, I try to plan ahead to prepare as best I can to stay true to my priorities, projects, to-do list, etc.
What’s helped me this year (and for the past few years), is my Rule the World Planner. I’ve tried all types of planners – digital and print, big and small, daily, weekly, colorful stickers, simple bullets, almost everything! This is the one planner I’ve loved the most!
The Rule the World Planner was created by the talented and fun, Ilana Griffo – who I love not only for her beautiful, useful designs, but also for her nonstop small businesswoman moxie. On her Instagram, she not only shares her own work, but work from other hustling artists and creators that inspire her. She truly embodies one of my favorite sayings ‘all ships rise with the tide’. As a fellow female entrepreneur, I cannot stress enough the importance of helping each other along the way.
Anyway, back to the planner… 🙂
Not only is it stylish, with gold edging and corner protectors – needed whoever that person is who just throws all their stuff into their bag (it’s me) – but it’s insanely functional. First, it’s spiral bound – again, I’ve tried a million planners and I’ve learned that I need something that’s this versatile! Then, each month is divided by a tab.
