Oh hey girl, I’m a pizza!

So while Tom was up in NYC for a conference, I decided to make a crazy pizza. Not that he wouldn’t be up for a crazy pizza…just thought maybe I should test it first before I feed it to him. haha

Anyway, I just went to the grocery so I have a ton of random foods in the fridge. I personally don’t like saucy pizzas. Not saucy like “Oh hey girl, I’m a pizza!” but like too much tomato sauce (let’s face it…I didn’t have to explain that, I just wanted to say “oh hey girl, I’m a pizza” hahaha) So I made my favorite, pizza with a bit of olive oil and yummy toppings!

Fancy Pizza Time!  pizza  


  • 2 C arugula
  • 2 shallots (chopped)
  • 1 orange or yellow pepper (sliced thin)
  • 1/4 C chopped prosciutto
  • 1/4 C walnuts (chopped)
  • 2-3 eggs
  • 1/2 C parmesan cheese
  • 1 pre-made pizza dough ( I used Pillsbury thin crust)
  • 2 T olive oil
  • 5-8 sprigs fresh thyme
  • S/P


  1. Preheat oven to 400
  2. In a skillet, saute shallots and thyme and cook until shallots start to become translucent
  3. Add peppers and prosciutto and cook until peppers are soft
  4. Add arugula and cook until it just starts to wilt
  5. Remove cooked ingredients and place in a bowl
  6. While you’re cooking the stuff in the pan, unroll the pizza dough on a cookie sheet. Lightly brush the top with a mixture of olive oil, salt & pepper
  7. Bake the pizza dough alone for 5 minutes
  8. While dough is baking, cook eggs in pan (I made them over-medium but you can cook them as you like)
  9. Remove the dough, and cover with ingredients in bowl
  10. Add eggs strategically so when you slice it, everyone gets a little bit
  11. Lightly cover with cheese and walnuts
  12. Bake for approx 10 minutes or until dough is crispy on the bottom
  13. Cut & enjoy!
