Easy Cast-Iron Pizza Recipe

Over the past few weeks of surgery recovery, I’ve been trying to find ways to challenge myself. I’m one of those people who has a sick day and thinks ‘oh perfect, I can take some time to do things on my list!’ HA! And then my sickness usually says ‘LOL WRONG.’ Well, surgery recovery has been just a few long weeks of sick days…and it will not surprise you to hear that I’m getting antsy.

The other day when I was watching some recovery Food Network, Rachael Ray’s 30 Minute Meals came on and she made this super easy, super yummy looking pizza. It had minimal ingredients, it looked delicious and, of course, it took almost no time to make. I had to try it!

And let me tell you…it was AMAZING. Try for yourself with the modified recipe below:

SPICY CAST-IRON SKILLET PIZZA

Inspired by Rachael Ray’s 30 Minute Meals 

Ingredients:

  • 1/2 lb spicy sausage
  • 1 T cornmeal
  • 1 can diced tomatoes
  • 2 T tomato paste
  • 2-3 cloves garlic (chopped)
  • 1 t oregano
  • Pinch of sugar
  • Fresh basil leaves
  • 1 lb ball of pizza dough (we used Harris Teeter fresh dough ball)
  • 2 C shredded mozzarella
  • 1/4 C grated pecorino cheese
  • 2 T honey
  • 1 t chili paste (we LOVE Gourmet Gardens Chili Paste)
  • Olive oil
  • Red pepper flakes
  • Salt + pepper

Directions:

  1. Preheat your oven to 525-550, as high as it can go (Yes, that sounds insane but really…it needs to be that hot! Like a pizza oven!)
  2. Place your sausage in a pan and saute on medium heat
  3. Meanwhile, place your skillet on medium heat and add cornmeal, just to dust the bottom (we put on too much, so be light!)
  4. In a food processor, combine your tomatoes, paste, garlic, sugar, oregano, 2-5 basil leaves and a pinch of salt
  5. Roll out your pizza dough to a circle a bit bigger than your skillet
  6. Turn off the heat to your skillet and add the dough over your cornmeal – you want it to come up the sides a little bit
  7. Pour or brush on your sauce as much as you desire (we kept our dose kind of light and stored the extra sauce for sandwiches/pasta later!)
  8. Add cooked sausage
  9. Add mozzarella and then sprinkle with pecorino
  10. Add to the oven and bake for 10-12 minutes
  11. While the pizza is going, add your honey to a small pan on VERY low heat – wait for it to bubble a bit, then mix in your chili paste
  12. Once you remove the pizza, drizzle the spicy honey on top, add a few rips of fresh basil and ENJOY!

EASY FENNEL SALAD

Inspired by Rachael Ray’s 30 Minute Meals 

Ingredients:

  • 1 fennel bulb, sliced thin
  • 2 C arugula (or whatever greens you prefer)
  • 1/2 red onion sliced thin
  • 1 T capers
  • Juice from half an orange
  • Juice from half a lemon
  • Olive oil
  • Salt + pepper

Directions:

  1. Chop and combine all ingredients
  2. Top with juices, olive oil, and spices
  3. ENJOY!
